MINNESOTA WILD RICE SOUP
1 Cup Wild Rice
4 Cups Water
1 Large Onion,
diced
1-3 Carrots,
diced
1-3 sticks
Celery, diced
1 Cup Ham or
Chicken, diced
1/2 Cup Butter
1 Cup Flour
8 Cups Chicken
Broth
Salt &
White Pepper
1 Cup 1/2 &
1/2 or Cream
Put Wild Rice and Water in a pan and bring to a boil, boil low for 45-60 min. When water has evaporated fluff with fork. Put Rice aside until later. Sauté in a large pot: Onion, Carrot, Celery, and Meat in Butter for 3 min. or until vegi's are done. Add flour slowly until blended (mixture will be goopy). Add Broth slowly until all is mixed well. Add Rice. Add 2-3 Cups Water as needed to thin out (You don't have to). Add Salt & Pepper to taste. Bring to a boil Slowly, add cream. When reheating, bring Soup to a boil slowly!
